Gotta brew!

Been a busy time, but the plan is to brew sometime this weekend. In the meantime, you must read this.

I find it interesting that Bhimani never uses tap water for the main Kombucha liquid (unless it was boiled). I wonder if this is common to ALL Kombucha makers or just her as tries to start her own business and overcome FDA guidelines. I myself used to do this when I began brewing several years back -- if water was used for cleaning, it was sanitized; if it was used for the fermenter, it was boiled. I found out later at a brew store, that the water quality here in Raleigh (NC) is good enough that it can be poured into the fermenter without boiling first -- which certainly helps cool down the wort quickly for yeast pitching. Is this practice of not boiling the water acceptable only with beer? Is this acceptable only in Raleigh?

As for my brewing, two batches conditioning as I write. A brown ale in secondary and a hefe in primary. In a few weeks, my beer supply will be replenished. I was down to only 1 case of ESB bottles and 1 case of 90 -minute IPA -- too little beer on hand for my liking.
